Dumplings with mushrooms, broccoli and cauliflower
A very simple recipe to prepare.
Here we have used fresh dumplings bought at supermarket, fresh mushrooms, frozen broccoli and cauliflower, extra virgin olive oil, some raw cherry tomato and a good deal of pecorino or parmesan cheese to toss the pasta with.
Preparation time: about 15 minutes.
- The base ingredient for our dish: fresh dumplings and fusilli bought at supermarket.
- Fridge and freezer... let's use what is in there
- An abundant drizzle of olive oil to start
- Fresh mushroom mix (supermarket)
- To prevent them from breaking, don't stir but gently toss mushrooms
- Delicious frozen cauliflower poured in salted water
- Blanch them no longer than two minutes (keeping the water for the dumplings)
- In the meanwhile, the mushrooms are ready
- Don't brown the garlic
- Chop the cauliflower pieces as they are still hot
- Put them in a frying pan along with minced garlic
- Let's toss!
- As soon as cauliflower looks oily add the mushrooms into the frying pan
- Toss to mix for no more than two minutes
- Cook the dumplings." We always have some in the freezer.
- Dice the fresh tomatoes. We wish we had the Pachino type!
- As soon as they rise to the water surface, pour them into the frying pan using a skimmer
- Toss to mix dumplings with sauce.
- Turn off the heat and add the raw tomato dice" The pan heat will soften the tomato
- Dust with Pecorino or Parmesan cheese
- Keep tossing
- Ready..."
- to be served with a garnish of raw tomatoes.
